Umm...egg yellows?
As a comment on the practicality of your suggestion, it would be very difficult to heat up the egg yolks in a microwave to the point they didn't cook yet would still be warm.

why not cook an egg on the stove? it really only takes a moment.. put your toast in first, heat oven cook egg, toast done egg done..

Maybe because whole eggs are cheap and plentiful and fresh, nearly a perfect food, and its pointless?

Egg whites are for those who are freaked out about cholesterol, which egg yolks have in abundance. The ''health conscious" crowd are very easy to rip off, and will pay a huge premium for a product which excludes the most nutrient dense, nutricious and tasty part of an egg. Dietary cholesterol doesn't increase blood cholesterol, but people are gullible. By the way, its very easy to separate a yolk from the white, but unless you're doing it for baking or recipe purposes (angel food cake,lemon meringue pie, etc) I just don't see the point.
