I found them everywhere shortly after that quest... but haven't had any random encounters for a long time now (about 15 levels).
It could be I'm not randomly exploring the world as much lately... fasttravelling near where I need to go and just legging it for a shorter amount of time.

No, I won't spend years playing this game.
But I can pick up this game a year from now, spend a few hours downloading mods, and I have a brand new game full of content on my hands.
Same thing in 2 years. And in 3 years.
And calling it a shinier version of Skyrim is just ignorant to the Elder Scrolls series. The mods keep the graphics up to date, but the amount of user generated gameplay content is ridiculous. And high quality. And it's all 100% free.

I understand the casual gaming that consoles provides and it is hassle free.
That said, the work and funds required to have a decent gaming capable computer are overstated and some games, especially TES games benefit greatly from the online modding community.
I think that TES has one of the biggest and best modding communities out there, some of the stuff that they do is amazing and can completely change the game for the better (aka tailor the game to your liking - remove frustrating elements, and enhance the fun ones).

Stumbled into a dungeon in a labyrinth by accident on the way to the first Greybeards quest. Few undead inside and everything was fine. Got to a deathknight (I think) and I was dead in 1 arrow. Went back and he used a spell (or shout maybe?) to wipe the floor with me nearly instantly yet again.
Either I have totally screwed something up with my character, or am seriously missing something as far as tactics.

Or you just need to start chugging potions.
I got jumped by some sort of undead mage thing right after I killed a dragon, and it nearly killed me a dozen times... took about 5mins to bring him down, most of the time paused looking through my inventory chugging potions & trying to figure out how to take him down.
Seems every once in a while they just throw something really hard at you to see if you can figure it out. The alternative is to just leave, skill up, and try it again later.

Yeah that I get, I get into fights all the time where I seem to spend more time paused chugging potions, but if the guy kills me with one shot of either a spell or a arrow, then something is totally wrong either with my build or the level of the encounter.

Ah, I missed the 1hit part.
That happens to me too on occasion... but I tend to manage to find a way to beat it. Mix of resistance potions, enchanted gear, sending in my companion first, summoning something for a 2nd companion (usually this is what helps most... spoiler below on a quest that could help you out with this), etc.

Kronos or something like that, right? K something. That was my toughest fight so far. Even tougher than the Skinner, who I was able to burst down with a well timed Unrelenting Force.
I felt kind of bad that I eventually cheesed it by getting him stuck on some terrain then pumping about 45 arrows into him from super long range.

Might just be my lack of enchantments/defences. Thanks for the tips, I will try a couple more times when I get home and see how things play out.

My guy is a total glass cannon. Most of my perks have gone into 1H and Archery, and I've neglected my defenses. I can take most enemies down in a single burst, but if I let 2 or 3 close in on me I'm toast.
With some pre-fight stealth archery, I can usually take out 2-3 enemies before they even reach me. Then I'll just pop around a corner and chop them down as they round the corner in a single-file line.

Sounds like my character.
Apparently it gets easier later on to get yourself hidden against once you've been found.
