The first town I went to I slaughtered a chicken and instantly became hated by everyone. I also went after the child and killed his dog.
Damn you Bathesda for not letting me slay the child. He was talking back to me, I needed to teach him a lesson.

There's a "main" quest, people say about 30 hours to do just the main quest.

I bought this on launch day but only have had about an hour of playtime. Seemed pretty fun so far, but hasn't really caught my attention.
How does the difficulty ramp up? If I'm level 5 doing a quest is it different than being level 10 in terms of mob stats? Do the mobs change their stats based on where you are in terms of advancing? If you do side quests and hit max level, then start the main quest line, does it become trivial?

I don't know on most of those...but:
- If you're a squishy mage, you get even squishier. Granted, this may have been because I've been doing missions I've had no right doing (I've been trying to rush through the College of Magic storyline), but when fighting enemy mages, you'll notice your lack of HP really fast.
- Mobs don't seem any different, but they slowly introduce stronger enemies (the one that stands out are the High Elves in light armour that seem to think you're a heretic)
- I know the first dragon you fight doesn't scale...not sure about the rest.

The mobs do level with you, but there are still harder and easier areas. There are about 5 varieties of bandits (bandit, bandit thug, bandit highwayman, bandit marauder, and bandit chief, if you go to an easier area you may see more bandit level bandits than bandit marauders, though they are higher level bandits. If you level up it does change the make up a bit but it still leans one way or the other in monster composition.
About doing side quests, that's pretty much what I've done (this character hasn't done the quest after meeting the Greybeards yet), and it has become trivial. Though that has more to do with how you build/play your character. If you build a poor character you will struggle at level 40, but if you power-game it will be trivial. I just built my final armour and weapons and I'm OP for sure (even on master). I'm thinking of re-rolling a mage on master difficulty and I think that will be harder, at least for a good while anyways.
Updating my earlier post I have my Daedric set, and 100 enchanting, so now I have 1360 armour and 329 one hand damage lol. Ebony armour is sexiest in this game though imo.

The Orc looking weird in the Dragonplate is my follower in my old armour lol. The Merlin's Beard I have just for mages, if resistance percentage's are additive I have 74% magic resistance in it. There are still vast swathes of game left though, and lot's of the main quest, if anyone wants it I can upload my save point from those pictures.

Smithing level 90 to learn the Daedric armour perk. I renamed it when I enchanted it though. The hard part was finding the Daedra Heart's for it (each piece requires one daedra heart), so it took me a while in-game to save them. If you do Azura's Shrine's quest for the Azura Star you can gain 3 hearts that way by killing Daedra.

Iron bar, leather strap -> Iron Dagger
Repeat a bazillion times
I'm up to 55 or something now
EDIT: I also do the transmutation of ore into gold ore, smelt that and then create gold rings to sell.
