I live in Brisbane now and I can tell you that you're in for a great time if you come down.
Summer is just starting in Australia and will be in full swing when you get here in December. Don't bother packing anything heavier than a windbreaker for rain as long as you're travelling North. My jacket that I brought down in February sits in my closet 99.9% of the time and I live here.
As for things to do...well there are a million!
Sydney has a good rail system...when you arrive take the airport train to Circular Quay; there are a number of hostels in the area as well as the Botanical Gardens, Opera House, and Sydney Harbour Bridge. Find a hostel to use as home base, do the Manly Harbour tours that are located just outside Circular Quay train station or head to Bondi.
Brisbane is not just a few hours from Sydney...it's a ~10hr drive...however it's worth it to come up here (you can take a bus, train, or fly...flights are ~$250 round trip). From Brisbane you can do a lot of things. There is a train that goes to the Gold Coast and the Sunshine Coast there are also lots of tours that head to the Whitsunday's or Fraser Island (~$300-$500 for the package which would last 3-4days).
Byron Bay is 1.5hrs from Brisbane, but there are a million surf spots/hostels/beach towns in between too. Byron Bay, Coolangatta, Tweeds Head, Burleigh Heads, Surfer's Paradise, Noosa (north to sunshine coast) and Mooloolaba (north to sunshine coast) are some. There is definitely no lack of world class beaches/surf breaks when you come to Queensland. Lessons to surf can be found at any of the popular beaches...it's usually a guy with a van and a trailer full of foam boards. They'll run classes 2-3 times a day and it will cost you around ~$70.
Other things I'd recommend are climb Mt. Warning (highest point on the East Coast, so it sees the first light on the continent...they have a tour that goes there), go to O'Reilly's at Mt. Tamborine for a Rainforrest Tree Top hike, Koala Sanctuary (hold a Koala...good zoo too), Australia Zoo is pretty amazing, and Underwater World.
If you wanna go to "the Rock" at Uluru its a little pricey, but can be done cheaper if you fly to Alice Springs then do a camping tour. You can also do the Great Barrier reef if you go to Cairns.
There are also a number of music festivals kicking off around Brisbane/Sydney, so something to look into.
As for doing it all yourself...well you'll have no problem. There are many many people doing the same thing as you, so just sign up for a few tours and you'll be all good.
