Sure is a lot of post-rationalization going on.
It pretty much all comes down to keeping your word and doing the right thing. You ordered a custom cake, so you're financially responsible for it. Even though you tried to cancel the order, it didn't go through without any confirmation, and the shop is on the hook in terms of ingredients, time, and effort. Stop looking for an excuse, and pony up.

He said custom design, which I took to mean shape. That may be incorrect, but I assumed that when ordering a cake for a girlfriend it's customary to order one in the shape of your junk. Is that not true?

I can't believe some people on here are telling him to just pay up. Any business that would phone me 80 times in 80 days, let alone a 4 hour window, is not a business I would want to deal with. Personally I would never buy from there again and I would tell everyone I knew about the harassment they showed towards me. Just brutal customer service. What has this obivously insane person done to his cake in the time he is waiting for payment?
In my opinion if you don't take a deposit as a business you are risking the person will not come back for the item. There is a reason places ask for a deposit or pre-payment when it is a custom item. This place didn't and that is their fault not this guy.

Except that they had called once and left a message that the cake was ready, and the OP didn't get back to them, and they had to phone him a second time, in which he basically announced that he was fisting them. So up until that point they were reasonable.
So at that point they had nothing to lose by hammering his phone 80 times.
Chances are they weren't going to want to do business with the guy again after he flaked.
Maybe next time, return the first message.

It was also their fault for not answering their phone or checking their voicemail. Cost of doing business is what I say. If they can't be bothered to take a deposit they can't be too concerned when someone doesn't show up.
Also it shouldn't matter if the customer didn't come phoning 80 times is harassment and I'm glad they didn't pull that on me as I would be getting back at during any spare time I had.

Scrape, Sell, and Shutup is what he should have done.
Changing the name from "Steve" to "Joanne" isn't that hard. This wasn't a fancy multi-tiered wedding cake made into the shape of your favorite dinosaur, it was a generic cake with some icing on it. I've seen DQ scrape names off cakes tonnes of times, cake is good as new after.
As mentioned, he essentially out-dicked you with all the calls, thus putting you back into the right.
