Democracy is only good when actual democracy is going on. You have to have more than just an election to have democracy. Other tenants like freedom of speech, religion, etc... have to be upheld as well to have a democracy.
When a fundamentalist religious party is in control, democracy, by definition, cannot exist.
So it really comes down to a question of how much power these fundamentalist organizations actually have. If they have too much power and influence then democracy will cease to exist.
The key is a strong constitution that can't be modified without a vote by the people. If you have a strong constitution and a separate judiciary than they can only wield so much power. In the case of Egypt a strong military should be an effective counter-balance to whoever is elected in the civilian government.

You'd need a constitution that directly challenges many elements of Sharia law. Also a government and judiciary willing to enforce and cooperate with the constitution. It's pretty easy for a corrupt parliament or military to undermine a constitution.
