Greece - I don't recall any typical beaches at Santorini - it is a very steep rim of a collapsed volcano. I would suggest taking the ferry to different islands in the Cyclades - Naxos, Paros, Folegandros. Ios is a party island for young scandanavians. Mykynos is a big gay destination.
Mallorca (Spain) is the more resortish beach destination for European tourists.
Expect to see much nudity at Euro beaches, and dudes in Speedos.

Yes, August is exactly when we plan on going. We have been a little skeptical on the Nice area because of the crowds.

Yea, in August you are better off finding something that is a little off the board.
I have heard from both Italians and French that it is a bad time for tourists in August because it is so damned hot and the cities become ghost towns because everyone is at the beach to escape the heat.
Probably some hyperbole, but I would Imagine partly accurate.

Ok, so it looks like we are considering something a little different than originally planned- a 12 day Mediterranean cruise. Port is Barcelona, and stops include Monaco, Rome, Croatia, Venice (ya, I know- a huge departure on my OP, but I had to concede to some of the things the wifey wants on the trip)
I guess we won't get nearly as much peace and quiet as originally planned, but that's ok. It will give us a bit of everything I guess.
Any cautions, warnings, recommendations?
I plan on booking the trip tomorrow during the snow storm- thinking about warm Mediterranean weather during a snow storm will make it easier to fork up the cash...

It's probably not a bad idea. I imagine the Croatian ports are going to be Dubrovnik and Rovinj. Both nice cities, but I prefer Rovinj personally. It doesn't have beaches like what we are used to with soft sand. They tend to be pebbly or rocky but the water is warm and there is something about swimming right next to city walls built a few hundred years ago that makes you feel surreal. Bring aquasocks or thongs to wear in the water just in case. It's not just a Croatia thing, but a lot of beaches in Europe are rocky.

Several of the ports you visit on a Med cruise aren't that close to the city and require a long bus ride -- just a warning! It's not that bad, but be aware that you might need a 90-minute ride. Some of them, you dock right in the city (Dubrovnik comes to mind), but Rome (Civitavecchia) and Florence (Livorno) aren't that close to the city.
As to the original question (beach vacations with other things to do), I'd highly recommend anywhere in the Canaries, but if you like beaches, Fuerteventura is incredible and right now it's dirt cheap. BA points should get you there through Madrid on Iberia, if not it's fairly cheap ($75ish CDN each way) to fly from Madrid on Iberia, Air Europa, or Spanair (we went on Spanair and it wasn't too bad, 3 hours each way).

Ya, good point about the ports. Most of the city-stops seem to be fairly close to the coast, other than Rome. We have been to Rome though, so no big deal if we only get 5 hours or so in the city- will probably just go straight to the Vatican.
Other stops are Monaco, Genova, Naples, Sicily, Dubrovnik, and Venice. The Venice stop is for 24 hours, which kind of sucks- would rather spend the extra time in Rome. Venice can be done in a day.
