The bar scene in Scottsdale is decent, but it's too far if you're staying in Glendale (where the Coyotes and Cardinals are located).
If you have a free day drive up to Sedona. A bit touristy, but fantastic scenery (just like Banff).

I think he means the Suns in Glendale. If you go to the Cards, go to Alice Coopers restaurant a couple of blocks away.

The Suns play in downtown Phoenix near the airport.

The Suns and Diamondbacks play in downtown Phoenix while the Coyotes and Cardinals play in suburban Glendale.

Voted one of the "World's Coolest Pools" by Travel + Leisure, you'll surely want to experience the OH Pool for yourself. Martini glass and olive design. Funky chaise lounges. Bar and table seating plus two community tables. Dining by the waterfall and drinks by the pool.
Some have rated Pizzeria Bianco the best pizza in the US:

The faithful and the curious, the foodies and the tourists, the hungry, the whiny and the just plain crazy come to Pizzeria Bianco in downtown Phoenix and settle into the outdoor picnic tables insanely early, even in 113-degree heat, eyeing one another with a mix of glee and gloating. For sure, they’re going to get tables tonight.
They will shovel into their grateful mouths wood-roasted vegetables just barely picked, and fresh mozzarella cheese that Bianco coaxed from curd into milky wonder that morning. They’ll dunk fire-tinged bread in local olive oil and sip wine until their teeth are plummy. When the pizza comes, it might be the Biancoverde, grassy with arugula, or the Wiseguy, all smoky and oniony, sausage-laden and divine. This is the best pizza in the nation, a New York Times food writer sighed in 2004. Nay, the best pizza in the world, crowed Vogue’s Jeffrey Steingarten that year.
At 5 p.m., the door opens and the entry goddess whisks the salivating souls inside and into the coveted 42 seats. At 5:06 p.m., on a slow night, there’s a 45-minute wait. At 7:15, the wait is up to 2 1/2 hours. At 9, you’re told to come back around 10; they’ll seat you before midnight, and meanwhile, you can get olives and beer and listen to Tucson’s own Calexico playing on the stereo at the charming Bar Bianco next door.

I second what Troutman says. That ValleyHo hotel is awesome, and their restaurant does good breakfast, too!
In Phoenix, my favourite Mexican food ever is at a place called Carolina's. (there's a couple locations around town.) It's fast food, but it has nice, fluffy tortillas, flavorful guacamole and very reasonable prices.

I've heard people will actually move all the way there for their excellent wine coolers.

Yup. One difference I noticed between here and Phoenix for women isn't so much the 20's-something crowd(let's face it, there's hotties everywhere), but women 35 and older are still smokin hot out there. Soo many MILF's...

Is there anything fun to do in Glendale after a hockey game? Or is it worth taking a cab back to Scotsdale after?

You should plan a trip to Phoenix, in say...November. Your knowledge could be so useful.

Westgate has some bars and restaurants and a few turn more "nightclub" at night. There's a dueling piano bar and BBQ place with a mechanical bull that gets pretty crowded, but it would be low key compared to Scottsdale. The bartenders at the Glendale Renaissance next door are very generous and usually don't charge you for all your drinks. Nice guys and gals working there too.

Stayed at the ValleyHo last year. Their big pool party was suppose to be on Saturdays, and we could the last bit of it. Didn't seem like any crazy, but, it could of been just the time of year.
Pretty cool hotel, in a very good location.
