BAKED ZUCCHINI - my fav
3 c. sliced zucchini, unpeeled
1 (16 oz.) can tomatoes
1 lg. diced onion
1 lg. sliced green pepper
1 sm. can tomato sauce
1/2 tsp. celery salt
1 (8 oz.) pkg. shredded cheddar cheese
Combine ingredients (except cheese) and mix. Place in greased casserole dish. Top with cheese and bake for 35 to 40 minutes at 325 degrees.

I hear ya. I made a fantastic veggie lasagna a while ago but it had like a dozen ingredients and took forever. That was a one-off.
Easy salad:
Romaine lettuce (from the hearts is the best)
Tuna chunks
Canned corn
Mix, and enjoy. For such a simple recipe it's pretty tasty.

unfortunately i find it hard as well, but those fruit bars are worth bars are worth 2 or 3 servings of fruit / vegetables a day are a fast fix in a tight crunch,
Also when making stews / or sauces, i'll chop up spinach and throw that in, can't even tell it's there.
If I'm using a can of tomato sauce (cut out cream sauces too, the tomato sauce itself, can count as a serving) with pasta, instead of just the sauce, i'll saute diced carrots, peppers, oninons (whatevers on hand) to give it some more.

I bet he's thinking of juice, juice can count as a serving, but you lose the fibre there. (even if it is pulpy OJ)
don't forget that a serving is like a small apple or half cup of peas, or loosely pack one cup of leafy greens.
serving sizes are surprisingly small,
(most of you don't even want to know how big your 2-3 servings of reccommended meat for one day is)

Go with veggies that steam down small. like spinach or baby bok choy.
Make a massive spicy skirt steak or shimp stir fry with tonnes of leafy veggies, you'll hardly notice them.
(Just don't over cook them)

I don't find it terribly difficult. Healthy habits are as easy to fall into as unhealthy habits. I've pretty much eliminated junk and convenience food from my diet.
It takes about five minutes to wash and chop up your daily requirement of fruits and vegetables.
Instead of a bag of potato chips, try chopping up some baby cucumbers, radishes, daikon, purple top turnips or bell pepper and sprinkle with a herb/spice blend like Mrs. Dash.

As a former big fat fatty and now only just a fatty I have to disagree with you on this one Reg ol' boy. Healthy habits are tough for some, they get easier as you do them, but buying a bag of gummy bears is so much easier for me then buying a bag of broccoli. I go for the broccoli now, but it wasn't easy.

Studies indicate that mice, given the choice, will choose sugar over cocaine, even after they've shown signs of addiction to cocaine. The same cannot be said about broccoli.
I agree that healthy habits can be formed, but they're nowhere close to being as easy. It's much easier (and cheaper) to sit on the couch with a bag of potato chips and watch Hells Kitchen than it is to go for a scramble in Kananaskis and make a healthy dinner when I get back.

Fair enough.
For me, I really don't have a choice. If I want to feel good, I have to eat properly. I have a medical condition that creates constant issues with malabsorption of nutrients.

Good thread. For the life of me I can't eat healthy. I should be 500 pounds with my eating habits. I eat fast food probably 150-200 times a year. I don't know what it is, but I think I am seriously addicted to fast food. I can eat something at home, but I will not feel full untill I have fast food.
My name is Puckluck and I'm addicted to McDonalds. I try all types of diets and I don't last more than 2 days. I NEED it in my system or I start having withdrawals.

I think you had a thread were people address this before, yes?
Don't try to diet, that didn't work for me. It's not a diet, it's about changing your lifestyle, as clinched as that is.
The need to have McDonalds in your system, the withdrawals, that will pass. Once your past that point, the thought of that crap will make you sick.

If by addressed you mean being made fun of then yes
My lifestyle is pretty healthy. I'm pretty active and in shape, but I can't stop eating fast food. I've never been addicted to anything in my life other than fast-food. I feel helpless. If quitting smoking is as hard as this then huge props to people who quit smoking.

I like this one:
1 cup of strawberries
1/2 cup of raspberries
1/4 cup of blueberries
1/4 of grapes
5 Tbls of plain yogurt
2 Tbls of walnuts
Put it in a bowl and mix together. Don't use a blender.
Add cinnamon if you want.
