Default Travel destination eats...

Inspired by watching the travel network last week and some of the food-related shows they had (Food Wars, Man v. Food, etc.), what are some North American travel destinations and their must eat signature foods? Some obvious ones to start:

Chicago - Chicago Style Pizza
NY - NY style thin crust pizza, bagels, cheesecake, Coney Island hot dogs
Philadelphia - Philly Cheese Steak

Canada is a little harder:

Montreal - Smoked meat, poutine
Halifax - Donairs?
Victoria - English style fish & chips?
Calgary - ?
Toronto - ?
Vancouver - ?
Edmonton - < insert joke here >

Any less obvious places and/or regional picks? Oh, and feel free to add restaurant suggestions

NS - lobster
Vancouver - sushi/Chinese

San Francisco - Clam Chowder in Sourdough Bowl
Puerto Vallarta - Fish Tacos
Buenos Aires - Beef and red wine
Lima - Ceviche
Sydney - Shrimps on the barbie
Chamonix - Raclette
Brugges - Mussels/Waffles
Munich - Schnitzel and beer
Amsterdam - croquetten with frites/mayo
Carcassonne - cassoulet
Dordogne - foie gras

Just got back from New York City. So many things to do there, but for some reason the food stands out over other memories. It is a foodies paradise. Cheap or expensive, every imaginable type, style, taste.

Best dim sum I've had since living in Hong Kong.
taro tapioca bubble tea - YUM!
Wagyu beef carpaccio at Morimoto's has me salivating just thinking about it
Grimaldi's pizza in Brooklyn
amazing wine list and appetizers at Esca
even a hot pretzel from a street vendor was tasty

can't wait to go back

Montreal - Viande fumee at Schwarz
Quebec in general - beer! Unibroue, St. Ambroise and Don de Dieu breweries
Santiago de Chile - Empanadas, pastel de choclo, pastel de jaiba, sea bass, curanto
Argentina - Parrillada (BBQ), Dulce de leche flavoured ice cream
Brasil - Real churrascarias (Brazilian BBQ), Bolo brigadeiro, Escondidinho

I watch Anthony Bourdain and he goes to a lot of places but my favorite one was when he went to Mexico, all the food just looked awesome. Mexico City, not the resorts,

Calgary - home of Ginger Beef...and the Caesar Salad right?
NFLD - Cod, toutons
Ottawa - Beaver Tails
Somewhere on the West Coast - Salmon
Saskatchewan - Pil

Brittany/Normandy - Galette (crepes), Cidre, moule frites (mussels + fries), a bunch of cheeses
Brasil - Feijoada (sort of a black bean stew), Chirascaria (BBQ)
