People that actually met Jesus who wrote anything in the Bible:

That's not entirely true. It's possible that Mark is taken from first-hand accounts.

(ps, Jesus didn't write any of the bible, the OT was from pre Jesus, and the NT was written primarily by a few men that spent time with Jesus, and Paul, who was 'visited' by Jesus and stopped persecuting Christ followers to become a Christ follower)

Well sure anything's possible.
Mark gets some pretty basic local geography wrong, which suggest that whoever the author of Mark got their information from wasn't familiar with the geography of the area where Jesus was.
The two separate different accounts of the feeding of the multitude in Mark also suggests Mark being assembled (at least in part) from different oral traditions rather than a first-hand account.

Actually the gospels are anonymous, they don't claim to be written by anyone who spent time with Jesus. And they are pretty clearly not written by illiterate or nearly illiterate fishermen who spoke of Aramaic but by educated Greeks who were writing for other educated Greeks. I don't think any serious biblical scholar thinks the gospels were written by their namesakes, that idea didn't even appear until the 2nd century.

Yeah, I've read that it's possible it was assembled in Rome, possibly through translation from accounts of a Christian sect associated with Peter.
As in two different accounts, are you referring to the redacted Resurrection story being added in sometime after the original account?

Oops, and about Paul, scholars think only 7 of the Pauline Epistles were actually written by Paul, and think 3 were definitely pseudonymous, written after Paul's death. The other 3 there are varying opinions on.
