Murrietta's is fantastic- great Rocky Mountain fare, and fantastic views of Canmore's Main Street and the mountains beyond.
The Trough is one I've heard great things about, but have never tried.
Crazyweed is also supposed to be good, but I would think it may be a bit more casual than what you're looking for.

+1 for Crazy Weed. It was rated top 3 restaurants in Alberta in a brochure I saw, so gf and I drove out there to try it out, and I must say it did not disappoint. The only bad thing is they're slow at bringing out the food. But if you don't mind the wait, then I definitely recommend it.

I haven't lived out west in a few years but we would always go to The Quarry in Canmore. Their homemade mac-n-cheese was delish!

Another good place in Canmore is Tapas. I really good place to go with friends and their sangria is REALLY good and tends to go down way too easy.
