I paid $40 for a 500ml bottle. I bought it at the Italian Centre which is in Little Italy here in Edmonton.

I have never tasted Truffle oil. What do you use it for?
However, I believe Truffle oil is actually olive oil infused with Truffles.
Olive oil contains a large amount of oleic acid (a monounsaturated fatty acid) which becomes a solid in the fridge. Your Truffle Oil will be fine and in fact it might be better stored in the fridge to avoid loss of volatiles.

I've had it in restaurants on pasta a few times, and I enjoyed it so much I had to have some. I just tried some on perogies and it was great.
I am not sure of other uses. Everyone feel free to throw some recipes this way!

Little Italy in Edmonton? That sounds like Chinatown in Kampala  I'd be suspicious if I were you. Heck the stuff is more expensive than Tequila.
PS, I bet it'd go good with veal.

Awesome. My mom cooked us up a couple hundred perogies during her last visit. I have to get some Truffle Oil and try this.

mmm truffle oil is delightful. I add it to my chicken alfredo with peas and it makes the pasta 10x better. It is also really good added to plain popcorn with some pepper!

Its fine. Keep storing it in the fridge. When you need to use it, take it out about half an hour early and it will start to thaw, starting along the glass of the bottle. Normally you use very little, so you dont need much to thaw before you have enough to pour out. To speed it up if you need a bit more, you can hold it in your hand to warm it up.

My son who is an apprentice chef, said that the flavour may be comprised because you cooled it down so much. You can still use it, it will be fine, but it is possible the flavour may be slightly altered.
Don't keep it in the fridge.
It may stay cloudy now that it has been cooled so much.

Once it comes back to room temperature, it will no longer be congealed. If the flavor is compomised, I don't know.
Olive oil will congeal in the fridge as well, canola oil, peanut oil and safflower oil do not.

Keep it in a cool cupboard away from any light. Light will ruin the oil. And, as a general rule of thumb, it will stay at it's peak flavour for 6 months, after that, the pro's say, toss it.
