The best combo for me is fries and gravy and living here in California, I don't ever really get that!

I suppose I woulda really thrown you for a loop if I's said 'caldo' instead of toasted...
Sopressato is a hot genova salami and bocconcini is a mozzarella. Cut the little balls of bocconcini in half and put them on one bread, then put some sopressato on the other bread, toss them in the toaster oven for a couple minutes, then assemble sandwich and eat. Good. So very, very good.
An equally delicious alternative to this (and the only exception to my tomato rule) is 'con pomodoro'. Instead of the sopressato, slice some fresh tomatoes and add them after toasting, and in lieu of the meat. Sprinkle with pepper. You won't be disappointed.
(ps, don't forget to add a few drops of olive oil to the bread)

I'd love to, but I'm afraid of being thrown out of the Flames' caucus for hobnobbing with the enemy. What I can do instead, is include the secret trick.
Instead of adding drops of olive oil to toasted bread, toast the bread in a frying pan in olive oil. Careful, not too much. Just a bit. Enough that the bread slides around in the pan, but not so much that it's soaked in oil. Add the bocconcini with enough time for it to melt before the bread burns. The sopressato is to taste.
Subway has nothing on this sandwich artist.
