Travelers cheques are good because they're more secure and replaceable if lost or stolen, but I've had problems trying to use them sometimes. If you're just going to mainstream places they're fine, but if you get off the beaten path at all some places won't take them. Visa is pretty universal, so a combination of Visa and travelers cheques is what I usually use.

Photocopy all of your ID and put it in a couple of secure places, ie, your carry on and your wife's purse. Leave a copy with a trusted friend so they can fax it to you if needed.
Take two wallets. Split your stuff between them so each is useful. IF you lose one it does not trash your trip.
the power cords for all your electronic toys. Need to charge them.
Plenty of tapes for the video player, extra cards for your camera, it is crazy cheap now.
suntan lotion so you don't have to pay through the nose or worry about finding it.
A small first aid/kid medicine kit.
COMFORTABLE shoes. A couple of pairs so you can rotate them at DW.
The phone contacts for your travel agent, the airlines, cruise line and hotels all in one convenient place, preferably a wallet type thing for your travel docs. Put another copy somewhere else.
Luggage tags for ALL of your bags with a business card, not home address.
A guide book for DW, makes the trip much more organized and you know what you are getting into.
things to entertain kids on the planes, DVD(with extra battery) many dvds, games, toys. Buy some little dollar store toys to give to the kids on the plane. When they start to get bored pull out a new toy. A cheap way to buy a little peace, for a while anyway.
An extra credit card or two, just in case (see wallet tip)
i think ABMs are the way to go. You can't lose an abm. Make sure you have a backup if you lose your wallet. Ie, your wife's card or your redundant wallet.
Snacks for the kids on the plane. Healthy if possible but treats if it will settle them down.
headsets for the movies on the plane.

Since I'm such a map geek, I usually buy an atlas for the area I'm traveling to. I love staring at the maps before I arrive somewhere so that I don't have to be that guy that stands on the corner with the map unfolded trying to figure out where I am.
Since you're going on a cruise, you'll be able to see the distance between the islands and get an idea of the cities you're visiting.
Buying one before you leave will probably be cheaper plus you can ogle it on the plane.

Make sure any liquids are a 100 mil or less.
All liquids have to be in a clear ziplock bag and out of your luggage so the screeners can see/examine it.
Have a spare set of clothes in your carry on just in case the airline loses your luggage.
Make sure your headphones are the noise cancelling variety. Regular ones will be droned out by the sound of the planes engines.
Eat before you go or in the departure area. Airline food is no more than pretzels and peanuts, that is unless you are traveling first class.
Try and get the exit row or bulk head seats as they have more leg room. Do it early in the morn as these seats go fast.

Are you sure? Because I'm pretty sure that's backwards. I was told to pack all of mine; or else run into the restrictions you listed with carry on.
Edit- just checked Transport Canada- nothing about not packing liquids.

You can put liquids of any size into your checked bags (so long as they're things you can transport, no lighter fluid or similar).
If you want to bring any liquids or gels in your carry-on, they have to be in individual containers of 100mL (or 100g) or less and they must collectively fit inside a single 1L zipper bag (medium size Ziploc).

Ok, i see what you are saying. I never mean't to say you must carry on your liquids. A lot of passengers pack light and travel with carry on only. Those are the people i was refering to. It's something i do as it saves time having to wait for your luggage to be unloaded.

you take your chances will the exit rows as sometime the seats don't recline. I guess if you were really tall and need the extra leg room they'd be worth it but for me i like my reclining chair. The noise cancelling headphones are a must they work wonders. I travel alot and don't always have tv's on my flights so a good book and an ipod are a must for me.
