I read through half this thread and then realized it was going to take a long time to read everyone's lists so probably, these have already been mentioned. Some movies I can pretty much sit down and watch any time are (in what I think is chronological order):
12 Angry Men (just amazing watching some of the best Hollywood talent on one screen together)
It's a Mad, Mad, Mad, Mad World
Any one of Fistful of $$, A Few $$ More or Good, Bad and the Ugly
Bullitt
Uncle Buck (some hilarious scenes)
Planes, Trains and Automobiles (has to be top 3 comedy movies of all time)
Any of the Indiana Jones movies (yes, even Temple of Doom)
Ronin (2nd best car chase ever)
There's bound to be more but this is all I can think of right now.

Jagger mentioned it but it bears being singled out..
The 1968 version of The Producers is one of the funniest things I've ever seen. I still quote lines from it.
I'll also add a mention of Rushmore. It's a Wes Anderson flick, and not for everybody, but every time I watch that movie it makes me smile.

Reading this thread reminded me of so many great movies out there.
Another that I really enjoyed was called The Wages of Fear. One of the most suspenseful films I've seen. Also agree with whoever suggested Killing Fields and Treasure of the Sierra Madre (which was the source of one of the greatest cliche lines ever).
Didn't notice Good Morning Vietnam yet, but enjoyed that one a lot.
