Not too old but Jacob's Ladder scared the crap out of me.
Of course you have the Night of the Living Dead Series - Dawn of the Dead being my fave.

Well, pretty much anything with Fotze's mom in it. Oh, wait, you said "Horr or" movies.
Not sure if you would could this as horror or just a scary drama, but The Last Man on Earth with Vincent Price was really well done for its time. Sort of a "28 Days Later" type of theme, where the entire civilization turns into zombies. Really ahead of its time and worth renting in my mind.

The original Phantasm is a classic. Love it.

One of my favorites is Repulsion, directed by Roman Polanski and starring Catherine Deneuve. Much more of a thiller than a horror flick, but chilling and worthwhile.
What else for thrillers. The Birds, maybe. Frailty is kick-ass, especially if you surround sound. Oldboy is one of my favorite movies of the last few years. Signs is well known, but good.
One recent horror flick you need to get is High Tension, as long as you don't mind subtitles. I can be quite a movie snob, and horror films are a notoriously easy genre for a movie snob to pick on, but I thought this one was really good. The Descent was also not bad.

I'll add Rosemary's Baby and Hellraiser to whats been listed, but you've probably seen both. In The Mouth of Madness too and Event Horizon are two that I liked, but not really classics.

Second vote for "The Thing" (the John Carpenter one circa 1984)
"The Entity"
Not really scary, but I enjoyed "Stigmata"

If want a really classic horror then the Cabinet of Dr. Caligari is surprisingly suspenseful for a silent film.
There's a neat satisfaction you get seeing a lot of horror filming techniques pioneered by one movie.

I have no idea why, but this movie scared the ever living shinguard outta me, of course I haven't watched it since it came out, so maybe I was just a silly teenager.
My fav horror to this day is still The Blair Witch Project, the whole internet campaign of mis-information just added to the feel of that movie.

Is the Shining considered a classic? That movie scared the crap out of me in grade 7, I was terrified.
IT was pretty scary as well, actually just thinking about it has me looking over my shoulder right now as I type these very words... how sad is that?
I'm a sucker for scary movies and haven't watched one in years.

It's a pretty funny movie too. Good choice.
I had to laugh at Prottotype's choice. That's not far wrong either.
Lot's of other good ones mentioned.

The Excorcist might have lost some luster due to bad sequels but the original scared the crap out of me. the first poltergeist movie with the clown scene made me jump out of my skin.
Nosferotu (sp?) was one of the first cool vampire flicks, not scary by todays standards, but the back story behind the movie made it legendary, and a movie was made about that legend featuring an excellent performance by Willheim Dafoe.
Hellraiser for pure gore, jacobs ladder was just a big acid flashback.
Rosemary's baby, the original omen and its sequel were excellent as well.
Pumpkin head was an old classic, and black friday (the original) was creepy scary in itself.

Evil Dead. Evil Dead 2. And possibly Army of Darkness if you don't mind taking comedy horrors!
Pure. Classics.
