Each enemy has a soul "class", and you must have an empty soul gem that matches or exceeds that class in order to trap a soul. Grand soul gems should handle any class. Mages normally have them lying around.

I get the feeling there are probably some pretty kickass cooking recipes somewhere out there... There isn't a Cooking skill to level up, so there has to be something awesome about it at some point.

I think its just that cooked food > raw food as far as the stats/etc that you get from eating it. But there could be more to it than that.

If memory serves, it listed somewhere in the manual or in the game that you can pick up more recipies. I'm betting there are some well hidden ones that provide major healing and maybe even buffs.

I'm level 20 right now and I haven't used any food or potions yet. The health regen seems more than sufficient to keep my alive.

That's probably because you don't use builds that will let you keel over to stiff breezes.
My primary characters either use mage clothing (which anything tears through) or light armour and heavily emphasis on both mobility and magic (leaving very little time to boost health).

Ahh, that may well be it. I am a Woof Elf, dual sword/archer, stealth, light armor. Stats are Base Magica, around 220 Health, and 170 Stamina. I start fights with some stealth snipes, then easily chop up anything that makes it to my melee range.

I am the same build...Except I take a stealth shot, then hide around the corner until they stop looking for me and do it again. It only takes 1 or 2 arrows and they are done.

I kind of suck at archery in this game. It seems Skyrim basically has an automatic correction for gravity (IE where you shoot is where it goes), so my muscle memory keeps aiming it way above where I need it to go.

That's exactly the realization I came to last night, after umpteen arrows over the head (which actually aren't that bad, since they turn around and look where the arrow hit the wall, and the next one catches them in the back of the head).

It almost seems as if the arrow will travel straight for X distance, and then progressively lose altitude past a certain point.
The two perks in Archery that really help are the zoom function and the slow time while zoomed in.

Too many perks!
Trying to get my character caught up in magic is fighting with my desire to do smithing which is fighting my desire to keep up the thief I started to go with.
I guess my playstyle is "can do everything but nothing very well" lol.
Someone will make a respec mod soon enough I assume, though I could also do it with a bunch of console commands.

You definitely need to focus on a few special abilities. Don't try to do everything, it will not work.
Two handed
Smithing
Light Armour
Lockpicking
Speech
Those are my 5 that I currently have +30 level in nearly all.
I don't use bows at all and magic only occasionally. Dragons are a little difficult for me to kill, but if I come around a corner in a cave, you face is going to be caved in by my 50 damage warhammer.

why'd you go two handed and light armor? seems counter-intuitive. i'm the exact same specs as you only with heavy armor, and dragons are pretty easy

Weight/Endurance/stamina mainly and I don't really like the way heavy armour looks.
I started out with heavy armour but switched because it's lighter, which means I can carry more things. I have a high enough skill in the light armour department to refine my armour to provide high level of defense.
Having a 30 light armour rating will destroy a 20 heavy armour rating.
Also, in oblivion, when you go to the master level in armour, there was no difference between light or heavy. They were basically the same.

Stamina is overrated... I put all my points in health.. never die, can take on up to 6 enemies and this is with a two hand weapon, no shield.
