I can't say I have ever had actual fine dining Chinese food. I do like the standard western Chinese diner/fast food though. I started learning to make a lot of it at home now, with varying results. I would dare say that my beef and broccoli is on par with decent restaurants, but for some reason I can't get the fried rice right. It seems like it should be easy.
One thing I would say for anyone making Sichuan dishes at home, it pays to make your own chili oil from scratch. It's actually pretty easy and makes a big difference.
