Staging out of Poland but not having control of the planes or pilots put NATO into a grey area. I'm not sure how that would work. I guess another option is Kosovo, who have already had soldiers (not officially) join on the side of Ukraine.
Either option would be daring Russian pilots to fly into airspace controlled by NATO, if they wanted to address planes on the ground. Is that brinksmanship, or simply prudent?
I don't know. Is giving Ukrainian planes a place to land safely considered active involvement?

If Poland is used as a staging area for Ukrainian pilots, Russia will almost certainly see that as a clear act of war by Poland and NATO. Things would escalate very quickly after that.
