At the risk of being a pedant, I don't think it is very useful to compare "Chinese cuisine" to these other cuisines. It is just far older and far more varied than any other cultural cuisine on earth (other than the Indian sub-continent I suppose). It would probably make more sense to break it down to its eight "schools": Shandong, Jiangsu, Cantonese, Sichuan, Hunan, Fujian, Anhui and Zhejiang.
Back on topic, Sichuan mala chicken is the best (wok-)fried chicken.
