Knifewear hands down. They also have a "garage sale" starting next Monday.

Obviously a personal choice, but here's a few I have:
For briskets, carving large cuts of meat:

Boning knife (also great for silverskin):

I've also picked up a cheap meat/bone saw from princess auto, and the OXO goodgrips poultry shears to spatchcock poultry.

For sharpening gear I also suggest looking at Lee Valley Tools. They have some great stuff at good prices. If you plan on buying Green Rouge for a leather strop, PM me first.
