I love quick pickling things. Some vinegar, water, dill, sugar, salt and pepper with sliced cucumber in the fridge for an hour is an awesome pre-dinner snack, or salad like dish.
Quick pickled jalapeno slices are awesome too. Slice 'em super fine on a mandolin with vinegar, a little salt and sugar and leave for an hour or more. Great on nachos, burritos etc.
