While I agree, dont forget that they totally were supposed to.
Luke was supposed to be some sort of Basterd Jedi and Vader was horribly injured so he cant do all the fancy dance moves anymore.
I think the point was to highlight how awesome the Jedi used to be.
Also yes, the fancy lightsaber baton-twirling crap was annoying. I'm hoping its a bit more brutally realistic in the new movie.
