Not that I don't agree with you, or that I think Gaudreau should stay in College for another year (I don't think he should), but there are two advantages staying in college from the reasoning you provided.
1) Less games - more time to concentrate on the physique. You simply are not able to increase much muscle during the season (many players actually lose muscle mass during a season). Playing about half the number of games does help in that regard.
2) Getting muscle BEFORE entering the NHL would be the key to the logic coming from the Gaudreau camp.
I do think he is better off at this point in joining the NHL. He is simply too skilled not to. I look at this year as his 'polishing' year - where he got to polish up on his crazy elite moves and passes because he is head and shoulders above just about everyone in the NCAA. Another year will just get him stagnant.
My money says he signs.
