Check out
Carbon backup from Koush I believe (ROMmanager). It is a back up program that uses your PC to store and complete backup of your phone and does not require root. Apps and data only.
You could also play with the Toolkit by mskip on XDA. It will backup your entire phone (ROM/kerne/apps and data) and you can restore it at any time. In theory you could restore your back up to a different phone of the same model although I have never done it, it should be plausible.
I created a backup of my completely stock setup as well as my custom one and have flashed back and forth a couple times with no issues (on a nexus).
