An ensign could end up in Command of a shuttle if the officer in charge and only other member of the crew was killed, but nothing like a ship where pretty much every officer outranks him.

It was weak they could have promoted him in the next movie.
Except the Captain can leave whomever he wants in charge in whatever order regardless of rank. Dumb move, but not without its merits.

So far, Kirk managed to smuggle himself on board, contract a mad disease, and still save the ship from coming out of warp into certain death, big hands and all.

Captain was impressed, and leaves Spock in charge, and Kirk "second in command."

Maybe it was bad writing for a movie, but maybe not so unrealistic in what might be a starfleet scenario.
