ulcerative colitis isn't something you just catch from something you eat in mexico, the reverse is actually true, it's alot more prevalent in Canada then Mexico. It's also something in all likelyhood you could be dealing with for the rest of your life and in your position i'd highly recommend doing alot more reading into it.
