I bought a Roam Mobility SIM at London Drugs and used it for a trip to California in April and it worked really well. Much cheaper than Roaming with your current provider. Make sure your iPhone is unlocked or you can't use it.

I second Roam Mobility. I have used it multiple times in Vegas and California.
Only issue was when I was in Vegas, my GPS thought I was in San Francisco... not sure that was a Roam issue though!

+1 for Roam Mobility. Worked flawlessly for myself, my dad, and my brother-in-law in Hawaii a few months back.
As for other countries, I have always gone to a store or kiosk once on the ground to see what sort of prepaid plan I can get. I'm not sure if there is anything "in advance" like Roam Mobility for overseas yet.

Roam Mobility seems like a good option for me as most of my out-of-country travel is in the U.S. However, we have friends who life in Australia and they have a travel sim that can be used in any country for phone calls and text messages, apparently.

Roam is fine for the US (I think they are in MX now too?).
For Europe I bought a WorldSim card years ago. It was good at the time when it was more difficult to get a local SIM card in Europe. Now though, the price point just isn't there. I find them and any equivalent insanely expensive for data.
For example, I was just in France and Italy and I bought an Orange SIM in Paris. I got the "holiday" package which gave me a bunch of minutes and text plus 1gb of data for a month anywhere in the euro zone for 40€. I used up at least 600mb on the two week trip. At 0.3 cents/100kb through WorldSim I'd have spent many times more that 40€. There are cheaper options in Europe from discount carriers like Lebara but they are akin to using Wind whereas Orange or the other real carriers give you full on LTE. I bought a Lebara SIM the previous year in Paris and I wasn't thrilled with the internet speed. It would do if you don't care. The Orange card is a good deal of you're hitting up multiple countries.
The only good thing about WorldSim or the equivalent is they don't cancel your SIM after a certain time of inactivity. With a local SIM you need to keep topping up in order to keep it. With Roam you need to pay for a day of usage and then the SIM stays active for I believe a year. If you use it even every couple of years it's worth it vs the cost of buying a new SIM.

Most of the providers offer a "prepaid" plan, which would be what you're looking for. Unfortunately, as you're well aware, prices in Canada are generally higher than what you'd see in Europe. But, in theory, you should be able to walk up to a (insert provider here) kiosk in a mall and get a prepaid sim and load it up with 30 days worth of whatever you need.

Obviously you'll have to dig a little deeper about extra costs (sim, long distance, etc.) as well as coverage, but it is a starting point.

Phone is Oneplus One, so unlocked GSM.
Anyone tried DR provider? Some data would be nice. $25US for 20 hours wifi where we are staying. I understand mobile data is really cheap there.

I've started to pick up the SIM cards when I arrive in a new country, usually before leaving the airport. This worked well for Hong Kong, Malaysia, Portugal & The Netherlands.
I think the most I have ever paid is 25 Euros for 1 GB for a month.
