Cape Canaveral is great, especially if you have any interest in space at all. It's worth the (incredibly boring) hour or so drive.

The Gulf side is much nicer than the Atlantic side at that time of year. A trip into Tampa would be recommended. Ybor City is cool. Tarpon Springs is great if you're into Greek culture. Clearwater/Dunedin is nice. Treasure Island Key is nice if you're into the rich and famous. It all depends on whether you're with kids or what your goals are.

Had an idea!
|
No kids. Will have 4 adults. I'm pretty set on a one day fishing outing and one day at the Space Center. Have 1.5 more days to fill.
Sea World? Universal Studios?

^ One day at Magic Kingdom, you're never too old for Disney.
When you go to the Space Center take the extra drive out to Cocoa Beach, beaches are awesome and it's a chance for everyone to dip their toes in the Atlantic.

If someone in the group is a big Harry Potter fan, Universal Islands of Adventure is a great park. It also has my favourite roller coasters in Florida (Hulk and Duelling Dragons -- or whatever it's called now under the Potter branding).
Otherwise, if you're only spending one day at a theme park in Orlando, you have to go with the standard by which all others are measured, The Magic Kingdom at Disney World.
On a weekday in January, the crowds will be so light that you won't have any problem going on all the rides you want.
It's also a great time to go weather-wise. Orlando in January is similar to Calgary in June.

Dueling Dragons (or Dragon Challenge under the Harry Potter banner) is now closed forever. In fact today was actually the last day of operation.
Going to be replaced by a new Harry Potter ride set to open in 2019.
If you are more into intense rides, Universal Islands of Adventure is the best choice. Followed by Universal Studios.
If you want to experience more gentle rides and childhood nostalgia go for Magic Kingdom.
Animal Kingdom and Hollywood Studios are okay. Epcot is probably the least interesting of all the parks.

Agreed. I did that tour a few years ago and thought it was great. Really interesting. We also managed to catch an actual shuttle launch while we were there, which was pretty amazing.
