How the hell do you get grimer? I need to evolve him but have only seen 1 and hatched 1.

He's not that rare, at least between events. Cloudy weather helps too. Alolan grimer is in the 7km eggs.

I had that happen too but I think they were both in the same place since all you can find now are bunnies and mareep. Has anyone caught a shiny bunny?

Caught a shiny shuckle, and a shiny mareep.
Hatched a shiny pichu today.

My luck rebounded hard in the past couple weeks.
I tried multiple places during the Bagon CD a couple weekends ago -- from Westhills to MRU to the Seton area -- and ran incense and lures wherever I could. 7 Bagons in total over 90+ minutes of effort in that event window. Couldn't even get enough candy to evolve the 100% Shellgon who was ready to go. Oy.
Then this past Easter event... I figure I tested only 130 Bunearys over the course of the week. 3 were shiny. Far ahead of the pace based on what I see over on reddit.

Unless you were constrained to those places by life outside the game, you definitely aren't taking the right approach. Walk around somewhere dense with Pokestops and spawn points and you should have an all-you-can-catch buffet. In Calgary, I'm guessing downtown/Eau Claire are best, university, Sait decent. In bad weather +15 best, Chinook second.

If it's nice out I go to PiP and it's great and if the weather is ####ty I go to cross iron.

I live on the west side & I've found three insane spawn points during community days. Westhills in front of the BestBuy, Aspen Landing, and Balsam Drive just north of Westbrook mall. I basically drive back and forth between those three places. You can do the loop 4 or 5 times & hit hundreds of spawns.
Don't know if it's more efficient than Prince's Island or Research Park but it's great for cold days & not having to leave the car.

What are the best pokemon to have? Not legends or anything, just normal? My top top 3 are a tyranitar at 3470, a salamence at 3340 and an espeon at 2898.
And what are the best attacks for them too?
I'm level 32 and I've only ever done raids alone because of where I live so I can't get any really strong pokemon

Honestly, there are so many ways to play it's just whatever you want. When I was that level, I focused on getting psychic pokemon like Alakazam & Espeon so that I could solo Machamp, then I tried to get a really strong team of Machamps. Seems like it's the best counter for a lot of stuff.
You should be able to do T1-T3 raids solo.
