Futurama, Fringe, Seinfeld, and X-Files are the only ones that I can say for sure that I watched start to finish. (I took from the OP that this was only about shows that had 'finished', not ones that are still in production).
I've got no problem reaching a point with a series where I say, "you know what, I'm done." Mad Men, Six Feet Under, Downton Abby, and Orange is the New Black all had that moment for me, where I had watched every single episode up to a certain point, and then quit the show and never watched an episode after.

Kenny Vs Spenny is one I thought of today. If anyone is feeling nostalgic Kenny has every episode on his YouTube channel.
Probably a bunch of kids cartoons and Disney channel shows from the early-mid 2000’s as well but I’m too lazy to think of all of them.

Unless I missed it, I noticed no one said “The Simpson’s”. Not even Cecil.
I wouldn’t believe anyone who said they watched it start to finish anyway, it’s been on so long!

To start, pretty safe bet I've watched just about everything sci-fi/fantasy from the mid-80s to now

Apparently Law & Order isn't finished. After an 11 year break they've ordered season 21. No word yet on which characters are returning.

I could more easily name series I haven't finished than ones I have. I'm a completest, even for the most mediocre of shows. It has to be pretty boring or bad for me to bail.

That's more or less how I roll with media, too. But I've become quite discriminating regarding what I'll even jump into to begin with
There's just so much more television content these days, including genre. Or perhaps it just seems like that cause we have access to everything now, new and old

Oh man, I found the first season tricky getting to know what was going on, but it was worth it for the rest of the series. Well worth getting back to.
