That's what I've done in the past but I really want to be able to switch back and forth for that modern rally feel when I want it.

Will do! It won't be anything special, I'm just making it out of wood and it's my first one, I'll be happy if it doesn't have any wobble. Basically just going to be a frame with a seat from pick n' pull bolted to it
I was looking at this one for a while but after talking to some people apparently it's not very stable

The things are insanely expensive, you can't get a good one for less than $1000 unless you're willing to put up with awkward seating position and a lot of wobble. That's why I decided to take a crack at doing my own, shouldn't be more than $150.
If all goes well I'll modify it to easily convert back and forth between racing games and flying games w/ a HOTAS
