So I'm late to the party and just started playing this... is it better to join the popular team to hold gyms, or the unpopular team to take them down?

Generally its easier to collect more coins if you are on the local popular team but unless the game is dead where you live there should be lots of gym turnover so it doesn't matter as much then. As a new player for the first couple months you will be lucky to hold more than a few gyms/night.
I would say if you are only playing by yourself then best choice is popular team.
If you are playing with family/friends then it may actually be better to be on unpopular team. Reason is when you take down a gym you get 3 spaces for people to add their Pokemon. If there is a group you play with and only option is to prestige you need to prestige each gym level up for each person's defender.

Looks like the change went online at about 1 pm. Noticeably more of them out there, I was just out, and have caught at least one of each already.

Agreed, I'm seeing them all over the place now. Even the evolved versions.

I'm definately noticing other players playing out there - many of them in the same way I generally play, driving around to poke stops and pokestop clusters. For example, its very easy to spot now at St Mary's university, vehicles driving in and circling around the parking lot without getting out - no other vehicles around really. The tire track lines in the skiff of snow show that almost every vehicle in there isn't driving in to park, but rather to merely turn around.
Also, there's footprints in the snow towards pokestops that aren't quite accessible from the roads, that are clearly just far enough to get into pokestop range, and not actually to walk to anything specific other than that.
I wonder if any of these types of places have confused security guards? Multiple cars driving by and circling without stopping?

Yeah. They are about as prevalent now as Santa hat Pikachu, at least Charmander and Squirtle are. Bulbasaur less, in my experience.
Caught Wartortle, Blastoise, Charmeleon and Charizard today.
Don't lure - they do show up, but about 1 in 20, so you are better off not to bother.

It was a perfect day for some outdoor skating at PIP today—got a few eggs hatched and caught a few starter pokemon along the way

Walked my charmander for a couple of months and got to 80 candies. Got the same amount of candies in one day and caught a wild charizard at crossiron anyways.
Glad I finally got it but it feels cheap.

Caught a Venusaur, but should be evolve a better one shortly.
Could evolve a blastoise, but need to catch one more squirtle to evolve all the way from Squirtle, to have a much better Blastoise.
Making progress towards Charizard.

Pokemon still needed:
Charizard - 30 candies needed for 100, but with event on will probably go up to 125 candies before evolving, to evolve a better one.
Poliwrath - 22 candies required
Machamp - 21 candies required
Muk - 17 candies required
Tangela -
Gyarados - 263 candies required
Omastar - 16 candies required
Kabutops - 40 candies required
Dragonair - 19 candies required
Dragonite - 100? Candies required, plus one more dratini catch.
Of the new ones, I have Cleffa and Igglybuff.
I have seen Kangaskhan, mr mime, Pichu, and Elekid in gyms.
The only original Pokemon that I don't have "seen" is Omastar.

Haven't got any babies from eggs but don't much care about Gen. 2 Pokemon.
Heading to Japan in March and Europe in July so I expect to grab Farfetch'd and Mr. Mime.

Caught a charizard today, and I was pretty excited, but then I read the last page of the thread only to discover that they're a lot less rare.
Still kind of excited, even if it's only around ~550cp.
