Default Let's talk about kitchen knives

Alright so I'm looking to step up my knife game in the kitchen. I have a set of Henckels Professional "S" that I got for my wedding 10 years ago any between age and my wife thinking granite counter tops make great cutting boards I am wanting to upgrade and get a set of knives just for me.

I'm looking at the Masakage line from Knifewear, just wondering what brands anyone else has used? Or could recommend? I know Knifewear is a great place to buy but is there any other places in town on online that might be worth checking out.

I've had great luck with Chicago Cutlery stuff. Rock solid and inexpensive. My 10" Chef's knife was $32 about 15 years ago.

I've got 2 Masakage knives and love them. Especially my chefs knife. But they are pricey.

Regardless, get them sharpened regularly and get a honing rod and use it.

I use knives by Shun. There's a great shop in Inglewood, and the guy knows everything there is about them. Offers free re-sharpenings when you bring them back within a year of purchase.

I would also suggest getting honing sharpener, which will keep the blade razor sharp. Get a better cutting board than your counter top. Bamboo is nice, and easy to clean.

After the initial cringe that "granite" and "cutting board" produced...

I've had the Chroma / Porsche Design knives for about 5 years and just recently added a few more to the collection. I've found they're not great if you have huge hands, but for me they're extremely comfortable. And I understand it's not really something to base decisions on, but I also think they look pretty badass.

Find knives with good balance, usually German ones are the best.

Yea, we are doing the same also.

Not sure if they are good knives, but we might as well try and get some for free from doing our regular shopping.

Great place to buy knives - I purchased a few Masamoto KS's from there. Sharpest knives I've every owned and I own a couple of Shun Elite's as well as owned some Henckel Pro "S".

After you go carbon steel, you will never go back to stainless steel knives.

I swear by Victorinox for a great, cheaper set. Especially for an amateur. Most are a slightly softer steel which makes care much easier.

I use Wusthof's personally. Can't go wrong with ze German's.

Zwilling JA Henckels.... I'm REALLY not a fan, but for home use they're sufficient.

So much more to knives than the brand. Go down to a store, see if you can try some out, find the one that feels right

I use a Katana.

Works well on fruit, vegetables, poultry, and other varieties of meat....

So I ended up getting the party started with a Masakage Kumo 210mm Gyutou and matching Nakiri from Knifewear.

Staff there was UNBELIVABLY helpful and fun, gladly spent the extra $100-$200 to support a kick ass local shop like them.

I was always a fan of Sanelli when I was in the industry. Still have 2 beautiful Sanelli knives that I use daily. There's a nice set at Costco.ca right now too, excellent price for Sanelli's.

Just do your self a favor and buy a good diamond steel and learn how to use it.
