Homemade hamburger patties
Anyone want to share their favourite recipes for homemade hamburger patties? I've looked online and they all seem to follow the same format. Bread crumbs, lean beef, onion powder.....
Surely there is better than this? I think some use a blend of pork and beef?
That being said, some of the best hamburgers I've had seem to be as simple as just salt & pepper with quality ground beef. Like earls, they have a mean pattie and I'm sure a former chef from there said it was simply beef with salt & pepper.
Anyone with a killer recipe they care to share?

Buy regular ground beef instead of lean or extra lean. The fat adds the flavor. It's true that simple beef+salt+pepper is often the best way to do it. Just make sure to only salt your patties directly before cooking. If you salt them ahead of time it will draw moisture out and change the texture.
The two things that I feel help my burgers the most though would be 1) digitial scale (so each burger is the exact same size) and 2) a burger press (so you get a nice uniform shape, and the dimple).
I bought one of these about 5 years ago, https://www.amazon.ca/gp/product/B00...?ie=UTF8&psc=1, and I use it all the time. It was only $13 when I bought it, but it doesn't look like amazon acutally sells them anymore.
Sometimes I'll add a bit soy soy sauce + Worcestershire if I want to pump up the flavor a bit, but I never add egg or onion or breadcrumbs to the patties.

You aren't being trolled. I only use oatmeal in my veg burgs buy I have seen and tasted it done before and it is tasty.
Post above about soy sauce is a really good tip too. Gives the burg more flavour than just salt.
If I am using store bought ground I use soy sauce, if I am grinding the meat for my own patties I salt and pepper the patties on the grill.
If the soy makes the mixture too moist for your liking you can add some breadcrumbs to soak it up.
You will want to use quick oats if using them.

I use either ground chuck or a mix of regular ground beef and bison. I season with salt, pepper, worcestershire sauce and garlic powder (sometimes I add something spicy like chipotle, cayenne or whatever.)
I don't use egg or any filler (bread crumbs, etc.)

Ground turkey, and stove-top stuffing as the mixer. I use a bunch of other spices, whatever I have that might sound good at the time, and I bake a bacon lattice as a topper.

I think I would leave out bread crumbs. I prefer lean ground beef, finely chopped onion, and salt and pepper.

I get ground beef from master meats. Add 1 egg, bread crumbs, Worcestershire, a little beer (Village Blacksmith is good), finely diced onion, garlic, salt and pepper. Don't have any measurements for all that, I just go to taste.

I use half lean ground beef, half ground pork. I add an egg, some bread crumbs, Montreal steak spice and some Worcestershire. Like others, I don't have any measurements I just go by feel.

Nothing but salt, pepper and some soda crackers. Don't even need the crackers but I like the texture they give sometimes.

That's pretty much my exact recipe, down to Masters meats beef . Sometimes I like to add feta, which is awesome. Adds a bit of fat, juicy saltyness. If you add it try to leave some larger bits.
