I think there are a few candidates that come to mind
Jennings
Burton
Brad Rutter (other all-time great, who competed against Jennings/James in the greatest of all time tourney...James is too strange)
Jeff Probst (hosted Rock n' Roll Jeopardy so he knows and is comfortable with the format)
Pat Sajak (same parent production company)
I think they will stay away from the comedic route, perhaps Ferrel is an outside possibility. I could see Colbert being OK.
I hard someone toss out the name Neil Degrasse Tyson but that seems like a long shot also.
When replacing an all-time great, you need to go in a different direction but it still needs to be someone who is pretty serious, but knows how to pepper in a little bit of comedy. You can't swing too silly though at all or the fans will reject the host.
Dipping into the sports world is another possibility: Dan Patrick, Keith Olbermann, or even Scott Van Pelt types.

.
If they want to go the celebrity intellectual route, someone like Brian Greene would probably be a good host.
But those kinds of people probably have enough work going on that hosting a TV show wouldn't be their top priority.
I think Ginger Zee would be a good person to throw into the ring as well. She is also an ABC employee, is science oriented, and has a lot of TV experience.

I thought they just announced Jennings as the new host? If so it’s a good decision. He’s got a positive association with Jeopardy! and I think he’ll stick around, whereas guys like NGT or Bill Nye would probably move onto other projects.

Interim host, and the first of an unnamed number of guest hosts.
I think the job could be his if he wanted it. He is already a segment producer on the show.
But wasn't one of the reasons he agreed to retire as a champion was so that he could go back home?

I said from the moment I found out Alex had passed that they'll likely make Ken the host. In the event that Ken doesn't want to move to/commute to Los Angeles then Brad Rutter would be their next choice.
The guest host thing is a neat idea to work out who works and who doesn't.
Austin Rogers is someone who would likely do a good job as well, never thought of him.

After watching the GOAT Tournament, I dont think Rutter has what it takes. I dont think I'd like him so much.
But they have a lot of people to choose from. I actually think LeVar Burton would be a brilliant choice.
My next selection would be Samuel L. Jackson but then I dont think they'd be able to operate on Cable anymore...

That's what I expected them to do. I wonder what they mean by "the Jeopardy! family"? Former winners? Former Celebrity Jeopardy contestants?
I hope they do a week with Will Ferrell.
Andy Richter would be another good one. I know he takes great pride in having destroyed Wolf Blitzer on Celebrity Jeopardy.
god no.
you need an engaging, seemingly smart person with a sense of humor.
having a jackass like will Ferrell, even for a week or two, would ruin the show.
I think John O'hurley would be an excellent host. I feel that he is very similar to Trebek in regards to mannerism and speech and he is very personable, a great story teller and would be excellent with the contestants.
