My condolences to you both. I have tried gluten-free crust, and gluten-free beer, and I can say that gluten is categorically, without a doubt, the best part of pizza and beer.

Just out of curiosity, would a person without gluten issues enjoy a pizza with a gluten free crust, or is this like a “better than nothing” kind of situation where even an average crust make from flour is still way better than gluten free?

To me, I have no idea why you'd order gluten free if you don't need it. It's not that all of them are bad(some are), they just aren't as good. The dough doesn't really rise much, so most places have a fairly thin rice flour crust. But it's not like a thin crust pizza, because it is denser. I like Micheal's, because they do manage to make it a bit lighter/more rise than thin and dense. I mean, go ahead and try one, but you also get charged the gluten free tax on it, which makes it an even worse choice.

Oh. I thought there might be some revolutionary, mind blowing pizza base that would be worth trying. Maybe like a pizza version of KFCs double-down, such as a pepperoni pizza were the base is another layer of cheese or a mosaic of pepperoni and cheese.

This was many years ago now, but we had all my siblings over for pizza to watch the World Junior games. My sister is celiac and dairy sensitive, so we ordered from Panago as I believe they were the only ones with gluten and dairy free options at that time. My sister said it was amazing so I tried a slice and that thing was completely inedible to me. I can’t even explain the texture and flavors, but it was not something I would ever try again. And as fuzz said, it was super expensive. However, I’m sure it’s just nice to have gluten free options too.

The whole Gluten Sensitive crowd make me laugh. I feel like they will eventually go the way of the "Lactose Sensitive" crowd.
And to be clear I ain't talking those with Crohn's, etc.
Gluten seems to be the current dietary boogeyman.

What? Dude, celiac disease is a bitch. And was previously unknown. I know a handful of people who suffered for decades. One who was anemic in highschool from it. Having no idea what the problem is.
Just because there are some people who read “gluten free” as some sort of “low fat” type nonsense doesn’t mean that it didn’t start from a place of helping people eat without ####ting their bowels out.

Celiac is covered off in the "Crohn's etc" comment.
Those with specific medical conditions are different.

Sure but those with actual medical reasons are first bundled up into the joke crowd. I just don’t understand picking on people for food choices, and having them have to justify them to make others feel better about themselves.
