Great job, thanks for these recipies, i haven't found the right way to make Eggnog yet, but i'll give these a whorl.
Because i cant think of anywhere else to ask this, does anybody know of a good place to buy a decent chocolate advent calender? I'm getting a little sick of the cheap Zellers/Wal-Mart ones you get.is there anywhere to get one with good tasting chocolates?
I think purdys had high quality ones last year... I may be mistaken

IIRC Laura Secord has a calendar which is quite good compared to the usual $1.49 products. I think it costs about $10.

I'm not a fan of the stuff you can get in stores- but we got some on the weekend for my gf.
The few times I've had the homemade stuff, it's been too strong in the alcohol department. I might try to make some slightly less strong stuff at home and see how the taste is.
Haha, I think you'll change your mind as you get up there in years.
I drink Lite Eggnog mixed 1/2 and 1/2 with milk (and a good shot of rum if I'm not going anywhere), and I don't have to worry so much about my arteries nor my waistline.
I do the same. I like to use a dark rum, but any will work. One thing I do different is that I add two scoops of vanilla ice cream and sprinkle nutmeg on top. The ice cream probably counters the benefit of using Lite Eggnog and milk, but it is so good!
6 egg yolks
6 egg whites
1 can sweetened condensed milk
1 litre whole milk (can substitute upto 100 mL with cream if you like it very rich)
1 tsp ground nutmeg (grated fresh, not the pre-ground stuff)
1 vanilla bean (split down the middle and scrape the bean paste out)
3-4 ounces of bourbon or rum
1. Beat egg yolks. Add condensed milk and mix. Set aside.
2. In sauce pan, over medium-high heat, combine milk (and cream), nutmeg and vanilla bean and the bean pod. Stir occasionally, and bring to a boil.
3. Remove vanilla pod. Remove from heat, and temper the hot mix into the egg yolks. do this very slowly at first otherwise you will have scrambled eggs!
4. Return to medium heat and simmer (~5 minutes)
5. Remove from heat. Set in an ice bath until it cools then refridgerate until chilled.
6. Beat egg whites to stiff peaks. Fold into cooled mixture. Add bourbon or rum.
7. Chill and serve with a sprinkle of fresh grated nutmeg on top
This came out really thick. Just waiting on it to chill, but I'm excited to try it.
