Default I need a set of knives for my specific skill set

Some of you know I'm big into smoked meats, now it's time to invest in a quality set of knives for trimming and basic butchering. What brands do you use and where are they sold?

I dont know how to sharpen knives with a whetstone yet but thats something id also like to learn.

There's four places.
There's the knife Hut, that's on third.
There's Knives-R-Us, that's on third too.
You got Put-Your-Knife-There. That's on third.
Slice Low, Sweet Sharpness... Matter of fact, they're all in the same complex; It's the Knife complex on third.

Just go to Knifewear in Inglewood. The guy who owns it is a great dude, the staff are all super knowledgeable, and you’ll come out with the right knives for the right job that will last forever and ever.

This used to be a funny Simpsons quote. It has been thoroughly ruined here.

Knifewear hands down. They also have a "garage sale" starting next Monday.

Obviously a personal choice, but here's a few I have:
For briskets, carving large cuts of meat:
https://knifewear.com/products/fujim...sujihiki-270mm

For general use:
https://knifewear.com/products/masak...as-gyuto-210mm

Boning knife (also great for silverskin):
https://knifewear.com/collections/ka...i-boning-160mm

I've also picked up a cheap meat/bone saw from princess auto, and the OXO goodgrips poultry shears to spatchcock poultry.

For sharpening gear I also suggest looking at Lee Valley Tools. They have some great stuff at good prices. If you plan on buying Green Rouge for a leather strop, PM me first.

The other thing to get is a cheap clever ($15-$20) from a restaurant supply store to hack into things that might damage your good knives.

Knifewear has a pretty good selection and enough information to guide you to find what you're looking for specifically.

My knives are from this collection:

https://knifewear.com/collections/kotetsu

It looks like they're sold out right now but they get stock in every once in a while. I also have some Fusion Morimotos that are my second most used knives, largely because of how much I like the handle:

https://www.zwilling.com/us/miyabi/c...edition-600d/#

Those ones are kind of tough to find now, I think, but if you can get the rocking santoku it's an excellent knife that I use a lot for heavier veg (carrot, potato) and things like parsley and cilantro.

Yeah, I was quite curious coming in, and relieved to find it was something pretty understandable.

I may or may not have bought a Guyoto because it translates literally into "cow sword".

+1000000 times this. I learned to sharpen with a whetstone after an incident with my best knife and some solid pig skin.

I thought that for a bit, but then like the simpsons, the joke happens a few more times and it is funny again.

BBQ enthusiast for years. Do most of my butchering and trimming and the best purchase was a Honesuki.

It so easily breaks down a whole chicken and is perfect for trimming away annoying silver skin.

Just get a Honesuki.

Knifewear also offers sharpening lessons. Have not taken it yet but it seems to be well worth the investment.

Are they running them again? They had cancelled when Covid started. I managed to get in on the last sharpening class they held here, but missed my knife skills class.

They're posting a bunch of lessons to their youtube page and they're almost as good as the class.

I bought these cheap knifes about 2 years ago with not much expectations as I just wanted some sharp knifes for the kitchen but I have to say for the money they are awesome, by far the sharpest knifes I ever had and they stay sharp, they're surprisingly very solid as well.

I guess the retail side of this is now called High Calibre Products. Get yourself a Victorianox curved 6" boning knife, a 6" inch straight boning knife and a 10" Scimitar steak knife. These will be the only knives you need. Worked as a butcher/ meat cutter for 10 years and these are the tools of the trade.

Pick yourself up a steel as well, practice with some of your kitchen knives on the steel. I learned to use the steel a bit differently then most would teach in order to keep the one edge from rolling. Learn how to use a steel effectively, if your edge is not/ stay aligned, it doesn't matter how sharp you can get your knife.
