Galveston pier is okay... It's mainly a cruise port town. I've flown into Houstonand stayed at the Grand Galvez for a night before a cruise; they let you keep the rental car there for the week (fly into Houston and drive the 50 mins to Galveston).
The beaches are okay, but didn't find much to wow us in Galveston, honestly...

Walk into any of the amazing bars in Austin and there will be great live music

Hard Eight BBQ in Coppell (near Dallas) is worth a visit. God damn I miss that place.
I second Hard Eight. That place is fan-freaking-tastic. There are a few of them in the Dallas area.
Dallas is huge. If you are anywhere near down town then the whole Dealey Plaza/JFK museum was surprisingly cool, and if you are closer to Fort Worth, go visit the old stock yards. Amazing entertainment district with great food and a cattle drive down Main Street twice a day.
If you are anywhere near a Buc-ee’s, it’s worth a visit. It’s like if Costco, Cabelas, and Petro-Canada had a child together.

I’m going for the solar eclipse. So Austin puts us in the middle of Texas allowing us to drive north or south that day looking for clear skies. Likely a ball game in Dallas and maybe catch a wave in Galveston. The surf is probably absolute crap that time of the year but whatever it’s saltwater.
I go for work a bit and usually stay in Hurst (don't do that).
My buddy lives in McKinney which while cute isn't worth staying in.
Last trip I stayed in Uptown.
It was pretty cool, I was 2 blocks from Katy Trail, had dinner at Katy Trail Ice House & Javier's Gourmet Mexicano (which is old school cocaine Dallas).

Franklin BBQ in Austin is a standard. Its worth the wait.
But, if you don't want to spend 1/2 your day queued up for it, La Barbeque or Styles Switch are light years ahead of the tourist traps - which are still better than anything back home.

There's a cool Speakeasy called Red Headed Stepchild, and it's located behind the Floppy Disk Repair Company. You'll have to look up the code online (reddit) the week you are there. Worth the Google.
Dirty 6th (the bar district) is fun, I'd just recommend going early and leaving early if that's your thing. Find some music, enjoy the vibe, and get out before 11PM.
I was down there 2-3x a year prior to the pandemic, and would eat & drink my way through the town for a week each time. I'd also hit up a liquor store called Spec's (biggest liquor store I've ever seen) and bring back some very affordable tequila & bourbon in my checked luggage.
