So I dont play much video games or know much about different series. However my son who has a switch recently discovered Luigis Mansion 3. Ive had a blast playing the main campaign with him as the Goo guy where we share the screen and work together. Its been awesome having something like this to bond over. We've recently beat the game and I'm wondering if anyone can reccomend any other games where we can play the main campaign together as a duo.
How is Shredders Revenge for kids? Anyone played it with a younger kid, around 5?
My boy loves Mario Kart, Builder 2 and can kind of follow along in the less crazy Super Mario levels.
Are there newb friendly settings?

Yes. You can easily get through the game on lower settings by just mashing attack. Story mode also has a super forgiving life/continue system, especially on multi player where you can get one another back up without losing a life.

Not sure how old your son is, but Super Mario Odyssey can have one player as cappy that never gets hurt or dies. Could be a good option if he's young or not that coordinated yet.
The Super Mario games are generally two players (or more). The two that come to mind are Super Mario Bros U Deluxe and Super Mario 3D World. The only caveat on this one is you can run into each other. It can be good as it promotes teamwork in certain circumstances, but sometimes you basically end up killing the other person which can be frustrating at times.

Finally picked up a Switch for the kids now that they're old enough to use it, and I'm so tired of having to play the same Rayman and Sackboy levels over and over again on the PS5. Biggest gripe so far is Nintendo being asshats and preventing players from picking the same character in Super Mario 3D World. I guess their devs never had daughters who both want to play as Peach
I played the first game and hated the combat. Choosing actions from a menu wasn't fun. Does 3 still do this?
I mean, sort of. It’s a real time RPG with MMO-style combat, so similar to something like World of Warcraft or whatever where you have actions to select and roles for each character to perform. This one is more class based and characters have lots of neat classes to choose from, they’re not overly complicated.
But yeah ultimately you’re not pressing A to attack or whatever, your characters auto attack and you build up abilities that you can use by pressing the right button.

Now you'll have to complete the game to unlock Rosalina for them.
Rosalina > Daisy > Peach
