Motortrend TV streams it and they have a free trial for 14 days.

If you have a VPN, you can watch the race at the FIA WEC site:
https://www.fiawec.com/en/
It costs 10 Euros and you can connect up to five devices (which means you can share the cost with friends), which is handy for the on board cameras. This is the official stream and has the better commentators who, in my opinion, are better able to convey the tone of this event.
I'm not sure who Motortrend/Velocity simulcast. Eurosport, perhaps? Eurosport has Carlton Kirby - who I like - but he isn't liked by many. I find him entertaining which helps while watching over night.
The Motortrend App has on boards for:
- Rebellion 1
- both Toyotas
- Dragonspeed 21
- Jota 38
- Richard Mille 50
Note that some teams stream their on boards on Youtube.
I've watched Le Mans on the official stream, Motortrend and Velocity. I prefer the official stream but it isn't always stable. I went with the Motortrend trial last year and kept it so I will watch on Motortrend.
A few years ago, Telus offered Velocity for a free trial for a month so I watched it on the big screen and had my lap top running the official stream. I was able to switch on board cameras as I saw fit and the WEC website had live-timing if that's up your alley.
You can try Eurosport player with a VPN, but I haven't been able to get it to work. It's offered on Amazon Prime UK and it looks like they have a free trial as well.

Notes:
- Many IMSA teams couldn't enter due to COVID, so the GTE class is significantly reduced this year.
- Two female teams this year. One is in LMP2 (Richard Mille, #50) and the other is GTE AM (Iron Lynx, #85)
- There are four additional hours of night driving compared to the traditional June race.
- Montoya needs an overall victory for the Auto Racing Triple Crown. However, he is in an LMP2 car so it is unlikely he will win the overall.
