Apollo 1 didn't have a very nice ending, so I can see why they didn't want to start with that one.
Apollo 8 on the other hand is a riveting story. It’s overshadowed by Apollo 11, but it was the first manned trip to lunar orbit. It’s the source of earthrise.

It's best to think of F&F plot in the same way you think of WWE plot -- anything can happen, it's all ridiculous, and it's just a flimsy cover-up for the spectacle.
Like, is Han really dead? Really? This series has brought back main characters from the grave before (Letty).
It was a street racing series -- a series that didn't sell very many tickets and was very likely close to never seeing another installment after the third one bombed. It wasn't until they changed it to a heist/action movie (and later full on action movies) that it took off. Can't blame them for going with what works.
I just want a good street racing series. That they struggled before they pulled a Saints Row on us with the series doesn't mean it couldn't be a success if done right.
