My god, that Newark airport is just full of crime. You can essentially see it dripping off the walls. Never stay longer than 40 minutes in that city.

Depending on the kid's age, MoMA and Guggenheim might not appeal. For a younger kid, the Natural History and MET would definitely fit the bill.
With the limited time, I would suggest starting at the MET or Museum of Natural History and then walking south through Central Park south to hit Fifth Ave to see the shops and St. Patrick's Cathedral. Then right there you've got Rockefeller Center where you can do the Top of the Rock to get a neat view of the city.

They redid one of the gates last time I was there. I think it was C gate. It is really nice in there. However if you have to transfer into one of the older gates like A, I suggest taking a bunch of acid because that would be the only way to survive that layover in that dump.

Pretty much the only thing worth checking out in Newark is the hockey rink. So, given it's off-season, definitely take the train to Manhattan.

Museum of Natural History, MOMA, Guggenheim, Statue of Liberty, all close before 6PM. Pretty tight if the flight lands at 2PM.
Best best would be Central Park, Empire State Building (if you can get in). Time's Square probably still has crazy people predicting the end of days, so that might be entertaining...

There's that too. Take a taxi to LGA and get on a 7PM flight to Calgary. Or, next time, spend the extra couple hundred bucks to fly to YEG then home.
That being said, I would totally consider going Nuffy's family's route to catch a ball game on the way home.

Assuming the cheap flights to Iceland are about $650 per person and ones with minimal layovers would be about $1000 / person. So, you're saving $700 for the two of them, but at the cost of probably needing a hotel and food and entertainment for those 16 hours.

Ya, I'm fine with a big layover if the cost of the flight justifies it, after considering the cost of a hotel, an extra day of travel and any other costs. I did it coming home from Vietnam, with 12 hours in Tokyo, but that was landing at 7am and leaving at 7pm so it worked well enough. Saved $400, as well as having better connections. If it's overnight like that I'm paying for a hotel.
