Just north of the MGM Grand, there's a little food court upstairs overlooking the Strip and NYNY. There's a Del Taco in the food court, not the greatest quality food, but dirt ass cheap. That's always my first destination after checking in and before heading to the Poker Room at MGM.

There's a steakhouse in the forum shops at Ceasar's palace called Joe's , we go there everytime we are in Vegas.

There are so many amazing "fine dining" establishments in Vegas, I wouldn't know where to begin. I don't think I've ever been disappointed by the food there in a half dozen trips. I'm sure some people will have useful recommendation in this realm, however.
When it comes to fast food, I recommend In-N-Out Burger (there are numerous locations throughout the city, and one very near the strip [ link]). It's a classic west coast burger joint specializing in fresh, simple, inexpensive burgers_fries_shakes. The fries seem to be a love-em/hate-em proposition ... I'm not a fan, myself. Everything else makes up for it, though, IMO.
The Dean Martin Dr. location I linked to above also has a museum beside the restaurant. It's interesting enough to warrant a brief gander.

I agree, In-N-Out for the burger win.
Almost all of a casino's inhouse restaurants are going to be good. They are almost all subsidized as a loss leader to bring people in, so you generally get a good meal at an excellent price no matter where you go. And because the other restaurants on the Strip are competing with these subsidized places, they are forced to be really good or they go under with the competition being so fierce.
I can't remember having a truly BAD meal in Vegas ever, and I've been there dozens of times. So my advice is just wander around and stop where you see something that appeals to you, you pretty well can't go wrong. Well, unless you hit the McDonald's near Circus Circus, but if you are at McDonald's you're pretty well impervious to bad food anyway.

If you're staying on the Strip, don't try to walk to the In-N-Out Burger. It's on the other side of the Interstate, and there's no way (that I could find) to safely get to the other side.

In-N-Out on Tropicana Blvd, on the west side of the highway behind NYNY.
I also like to get Sirrico's Pizza at NYNY... and Gonzalez Y Gonzalez at NYNY.
Never miss eating at Cheeseburger Paradise in the Miracle Mile Shops (in Planet Hollywood).
Always have breakfast at Rainforest Cafe in MGM Grand.
Also stopped a few times for breakfast at Denny's by Casino Royale.

Go to Excalibur, head west on the sidewalk alongside Tropicana Blvd. There is a walkway along the side of the road that goes over the freeway. Once you're over the freeway, there is a crosswalk across to In-N-Out. Do it all the time. It is safe.

Just got back 2 weeks ago and was floored by a few different locations.
Tender in the Luxxor hotel was amazing. Crappy hotel, amazing restraunt. The steak was unreal, good wine. Nice layout. Really good food.
Spago. It's Wolfgang Puck's diner in Ceasers Palace. Must have the same menu up, I highly recommend the popsicle chicken wings or calamari for a starter. I had the spaghetini (sp?) for a main and it was pretty damn good. Last time I was there I had an open faced meatball sandwich for lunch. I still dream about that dish. Pretty sure Bobby Flay has a place in there too. Can't go wrong with either. I love that Hotel.
Also rolled through In n Out Burger. Agreed, fries aren't gonna blow your hair back, neither are the shakes but the burgers are amazing.

This was under construction and impassable when I tried it (and it was a few years ago), so it's probably better now. I was staying at Excalibur and could see the In-N-Out sign from my room, but couldn't find any way to actually get there.

same as a few other people I recommend:
-Stripburger (Across from Wynn, attached to the Fashion Show Mall)
-Earl Of Sandwich in Planet Hollywood
-In-N-Out you can walk there from Tropicana Blvd, cross the freeway on the South Side of the street there is a sidewalk.
-Ellis Island (Casino one block behind Bally's) all night unadvertised 6.99 steak special. There is nothing gourmet about this. But it's 3am, you're drunk and soup, fries, green beans and a sirloin steak rule at this price
-similarly...the pizza at the place in NYNY is excellent when you've had a few
Also, I recommend checking out restaurant.com for gift certificates for Vegas restaurants. You technically need a US address to sign up, but just put in a BS address and then pay via paypal.
Basically you get $25 gift certificates for restaurants for $10 (you need to have a final bill of $35 or more to use it) But you can also readily find discount codes online to get these even cheaper. It's not uncommon to get $25 GC's for $2 US.
