Again, this is entertainment. My guess is White knew McGregor was coming into town and, after the main event was off due to Ferguson pulling out, probably White wanted start up the early stages of ramping up the build up around him fighting Khabib, especially if Khabib wasn’t going to fight on this card after the pull out.
White figured it would be some trash talking at a presser, but McGregor took it to another level as he does.

It strikes me as odd that you don’t fight at your fighting weight.
I'll only speak to my highschool wrestling experience. Going at your natural weight would mean you're at a disadvantage already as you're facing people who have more muscle mass than you in your weight class, and as you know, more muscle mass mean a stronger wrestler.
Cutting weight is essentially trying to sneak into a weight class and you'll be either at par or have an advantage over other opponents
Real life is not a video game or a movie where a Lara Croft stick girl can take on 250 pound 6'4" man.
That extra 10 pounds of muscle is a big difference. In UFC's case, these weight classes are a 15 pound difference from each other

How does that change anything though? If some guy cuts 10 lbs to sneak into a weight class and fights a guy naturally at that weight class’ limit, there will still be that 10lb difference in the ring.

Leading up to weigh-ins, fighters try to lose as much fat and fluids as they possibly can, almost or to a point where they're dehydrated.
Most Fighters are naturally 10-20 pounds above the weight class.
They all know and play this weight cutting game for their fights
