Default What to do with a lot of vanilla?

After almost fainting when looking at buying a bottle of vanilla extract at Costco ($40), and reading the Herald article on how to make vanilla extract, I felt pretty inspired and bought a bunch of vanilla beans online from France. They were inexpensive, so I purchased probably more than I need to create a lifetime supply extract. Any culinary wizards have ideas for utilizing these in the best way possible?

Grind it up and smoke it.

I'm serious there are all kinds of recipes for smoking vanilla beans and using it to make home made ice cream.

Take some of it and throw it into white sugar. You have vanilla sugar for baking or coffee

Out of curiosity what website did you order this from?

And for ideas infuse it into some booze. Never actually done it myself but I've heard good things.

I bought it from Samba Vanilla. Took just over a week to arrive via regular mail. http://sambavanilla.com

I kind of did my shopping based on the article from the herald. It was kind of serendipitous since the article came out the day after I sought to buy a bottle of extract. I just need to find some cheap vodka. Maybe Kirkland voda.

I like everybody's ideas so far. Ice cream, sugar, and booze. Should be fun experimenting.

Indeed, the only correct answer is infusing a bunch of crappy vodka

In a similar vein, I have been working on a recipe for a chocolate vanilla stout.

How many beans did you get in total? Looks like maybe 20? Not that many in the grand scheme of things. I think I'm going to add 5 into my stout when I finally make it.

There should be 30. They were vacuum packed pretty tight in groups of 10. I might just get started on making vanilla extract for Xmas gifts. Does the chocolate vanilla stout taste at all like chocolate vanilla?

Is that what you want it to taste like, or are there some flavours you're hoping to get out of the chocolate and vanilla that aren't, I guess, their normal taste?

Lots of folks I message with online tell me they're pretty much only into vanilla, but I've got no idea what they're doing with it; it always just seems like a weird conversation-starter to me. Want me to message them and ask them for ideas?

I put it in my container of raw sugar for my coffee and it's a nice tasty addition.

One thing I would do is take about 10 of those, split 'em, scrape 'em, and place everything in a one-pint mason jar topped with brandy/whisky/or vodka and make some vanilla. You can continue to add used beans and top it up from time to time.

I ordered a ton of vanilla from Beanzilla a few years ago, but they went moldy on me. They weren't as dry as the one's I'd normally bought. My own fault, really: I should've dried or frozen them or something.

Anyway, Beanzilla's prices have skyrocketed. I will look into Samba Vanilla.
