I'll add 2 Crows Breing on Brunswick as a great place to get a beer.
Check out the library, it's a really neat place.
Spring Garden Road has been completely redone, walk up from downtown to the Halifax Commons.
But as bc-chris reccomended, leave, come to Cape Breton!

OK, I'm intrigued with Cape Breton. Assume I am crazy enough to juggle things around to crank out a day trip to Cape Breton... What would you suggest I could do and still return to Halifax by 8-9 ish? Ceilidh concept seems interesting, but no idea how to locate one to attend.

Halifax to Cape Breton is a 4 to 5 hour drive one way. You have to head north to Truro before heading east to Cape Breton. Definitely not a day trip that gets you back to Halifax by 9pm.
Peggy's Cove, Lunenburg & Mahone Bay are worth the effort. Also look into Burntcoat Head Park for Bay of Fundy and those crazy tides with less driving required from Halifax than heading over to New Brunswick side. If you head to PEI, consider taking the Confederation Bridge over (requires you to drive a bit into New Brunswick if you really want to say you've been there) then take the Wood Island ferry back. (interesting fact: It is free to get to PEI on the bridge & ferry - you only pay to get off! )
Another idea would be Melmerby Beach in Pictou County as the Northumberland Strait water is much warmer that the Atlantic Ocean, although May is probably not warm enough to truly appreciate a day at the beach. If you do go, try some Pictou County style pizza in New Glasgow before heading back to Halifax.

Yeah, Halifax to Sydney is a 4-4.5 hour drive. It's a trip all on its own.
Lots to do across the island here (Cabot Trail, Alexander Graham Bell Museum, Fortress of Louisbourg, Miners' Museum, Cabot and Highlands Links, Sydney Boardwalk, etc) but it's not something that could be done in a day trip for Halifax.

Halifax is an underrated Canadian city. Lot's of microbreweries, running trails, etc.
Peggy's Cove is cool too.

I was going to suggest this too. Also, grab coffee and something to eat from Cabin Coffee (our friend runs it)

I have never been to the east coast, but have always wanted to go. This thread is making me want to go right now!!
If / when I plan a trip, what time of the year is best? I would like to hit decent weather, would not have to be middle of summer because I enjoy that time in Alberta.

Ya, this is good, I think we did Peggy's cove first thing in the morning, which was awesome with the morning mist, then went for a walk at Hirtle's Beach up to the trail at Gaffe Point.
https://goo.gl/maps/NYJLAwZsHgRqvg6X8
It's a nice quiet trail with some cool geology. Or you can just hang out on the beach.
Then on to Lunenburg and hung out there for dinner. Not sure if the Bluenose II is still there? We ate at a restaurant on the boardwalk, with a nice view of it for sunset. Made for an excellent full day not far from Halifax.
First shot is at Peggy's Cove, the other 2 are Gaff Point trail.

Oh, and for something a bit different, you can head here at the end of your trip to catch all the wildlife you didn't see:
https://wildlifepark.novascotia.ca/
We had time to kill before our flight, so went there for a few hours. It's only 20 minutes from the airport.

Our weather is regulated by the ocean so it doesn't usually get too hot, or too cold. But it means we don't get a lot of dog days of summer weather.
July through September is usually great weather. September is often our best month.
October has decent weather and the fall colors. Celtic Colours International Music Festival is in October.
If you're in Sydney, be sure to check out trivia night at the Breton Brewing Company on Thursdays. Regardless check them out, they have the best beer, better staff, and us regulars love chatting with folks from away.
If you're going to trivia book a table early in the week. (Also let me know, if I'm not hosting I'll be sure the host/regulars/bar staff will treat you well).

Challenge accepted. I shall see how many things I can knock off the the list of things to in Cape Breton on a single day trip.
Assuming my temporary license doesn't get in the way of me getting the rental car. At least I found out today it expired two weeks ago. Whew.

I lived in Halifax for 25 years.
Cabot trail is the only must do thing in Cape Breton.
Lunenburg/South shore area is really nice and the area I'd probably visit.
The Annapolis Valley is also really nice for a day or two.
It rains there, a lot. Your best chance of avoiding rain in August/September. I went back to visit in July a few years ago and it rained 6 out of 7 days.

Good luck. I respect the challenge, but I don't think its physically possible.
Cabot Trail is a couple of hours, and Louisbourg is a day to do correctly, but minimum 3 hours.

I would add getting drunk with me should 100% be on the must do list of things to partake in while in Cape Breton.
