Finally, I would like to advertise my favourite cover albums ever. Mick Harvey (of Bad Seeds fame) has done two albums of Serge Gainsbourg covers, called 'Intoxitaced Man' and 'Pink Elephants'. Brilliant stuff.

Boo, any Baba O'Riley cover discussion begins and ends with Pearl Jam. They've been covering it for literally 20 years, and do an amazing job. Also, based on the fact that the guitarist is using the exact same riff that Mike McCready uses to transcribe the synth to guitar, I'd say the boys in Gaslight anthem are actually covering Pearl Jam's cover of Baba O'Riley, more than than the Who.
Plus, check out the awesome PJ crowd (some of the best fans in music), instead of 1000 dumbfounded fans at a Gaslight Anthem, going "what the hell are they playing?".
Especially listen to the crowd during the famous "don't cry.." portion. Awesome.

Interesting choice for her to cover Active Child a band that is not well known at all. Shows she has great taste in music and can take a great song and bring it to her masses. Original video is hard to beat though.
Allen Stone is my favourite artist by far right now. Seen him twice in Vancouver and was blown away both times. This is him covering "Is this love" by Marley at the last show I saw him at.http://www.youtube.com/watch?v=t4TJSaX1AIc

Classic bit of rock steady from the late 60's covering an old PJ Arnold song, best part is that the singer has no idea what the words are so basically just repeats chorus while throwing in odd snatches of the song in random order and at times just makes up the words completely.
Local jamaican labels would bang out a quick cover of a UK or US hit before the record could be imported into the island usually taking about 5 minutes to run through and record it with musicians and singers that had never heard the song and had no words or music to go by!
The garage-soul band The Make-up do what in my opinion, is a pretty cool version of "Hey Joe". They do it somewhat theatrically and as a duet, and it is a little corny, but in a good way (like the telephone call portion somewhere after the 5 minute mark:
I also like the Constantines and Feist doing Islands in the Stream. This was actually my wedding song.
And Tegan and Sara do a good job on this Bruce Springsteen song:
